- Farcis niçois are tomatoes, courgettes, onions or peppers, hollowed out and filled with a meat-based filling.
- Beignets de fleurs de courgette are the result of frying courgette flowers wrapped in a light and crispy pastry.
- Merda dé Can are chard gnocchi that look like “dog droppings” because of their colour and elongated shape.
- Mesclun created by the monks of the Cimiez monastery in Nice is a mixture of shoots and leaves of vegetable plants that are eaten as a salad.
- Panisse, made from chickpea flour and water, is often prepared as a fried or baked square stick.
- Soupe au Pistou is a pasta and summer vegetable soup (green beans, courgettes, potatoes and tomatoes) served with pistou (a crushed mixture of garlic, olive oil and basil).
- Stockfish or L’estocafic in Nissard made from dried fish (cod or haddock) is like a stew with potatoes, peppers, olive oil, olives, garlic, onions and aromatic herbs.
